This began as a collaboration to rebuild a sustainable food system in the Adirondacks that creates connections between classrooms, cafeterias, communities and local farms.
Currently our goals are:
*to have 15% local produce in K-12 schools by 2014
*cook with the student garden group
Saranac Lake has 4 cafeterias serving 1300 students (1281) with 13 staff. Sample menu's are available here.
We have created many documents to assist cafeteria's in the process of obtaining and using local food. This includes procurement bid cover letter, informal bid forms and a resource handout. We also created a seasonality chart to help us organize what was available when.
